If the sentence does not make sense without the part that you intend to put after which/that, use THAT

e.g.
Instead of: SARS-CoV2 infects cells, 𝘄𝗵𝗶𝗰𝗵 express the ACE2 receptor.
Use: SARS-CoV2 infects cells 𝘁𝗵𝗮𝘁 express the ACE2 receptor.
The sentence preceding 'which' does not convey the intended message on its own, therefore, the later part of the sentence is required.
